Terry B - Sounds like a lovely trip, Gemma. We spent several days in the Holland area a few years ago. Quite charming, but a very religious community. Hence the strict Sunday liquor laws.
And just so you know, when I googled Holland, Michigan, this post came up on the first page of results. Pretty cool!

Herb-Roasted Hasselbacks

Terry B - Wow, Gemma! These sound delicious–and the chopsticks are an ingenious way to control the potatoes as you cut them. I agree about rosemary being fabulous on potatoes.

mary - It’s funny, I’ve prepared potatoes this way forever (it was a family thing, usually in summer cooked on the grill in foil packets rather than stove and oven), but I never knew that they were called hasselback potatoes.
And I have to agree that potatoes with garlic and rosemary are tough to beat.

Terry B - Sounds like a lovely place, Gemma. Your complex salad reminds me of an amazing lunch in a little sidewalk cafe in Paris. We had ordered slices of quiche–a little pricey, I thought, at $7. But when our plates came out, the quiche was teetering atop a salade composé, a huge affair with hard cooked eggs, green beans, radishes, potatoes, olives and many other ingredients I don’t remember now.

Terry B - What a lovely evening, Gemma! Being a true carnivore, Nick’s entrée really looks amazing to me. But like too many Americans, unfortunately, I don’t generally think of the terms upscale and Mexican cuisine in the same sentence. Yeah, I know–Rick Bayless, Adobo Grill, etcetera. This review makes me think maybe I should.
