If you really feel like splurging with buying a book, you might like to invest in The Professional Pastry Chef by Bo Friberg. It is a really good book, it may look a little intimidating, but it is really good. He also has a website(chefbo.com). It’s $65 US book price, but I got it off of amazon.com for a little bit less.
